Vegetable Kugel

  • 6 zuccini
  • 2 carrots
  • 1/2 cup chopped onions
  • 1/2 matzo meal
  • 1/2 margarine (melted)
  • 2 eggs
  • 1 tb sugar
  • 1 tsp salt
  • 1/2 tsp pepper
cook zuccini and carrots till soft. Drain and mash. Combine with half melted margarine and all other ingredients.

Pour into 9" greased pan.

Drizzle remaining margarine over the top and sprinkle with matzo meal. Bake at 375* for 1 hour.
