Bean Salad
- 1 cup chick peas
- 1 cup cubed seedless cucumber or Kirby
- 2 cups cubed (1/2") tomatoes
- 1 cup cubed (1/2") yellow sweet onion
- 2 tbsp red wine vinegar
- 1 tbsp olive oil
- 2 tbsp finely chopped basil or mint
- 1 tbsp finely chopped parsley
- Salt and pepper to taste
Toss all above ingredients in large bowl, chill and serve.
