Bean Salad

  • 1 cup chick peas
  • 1 cup cubed seedless cucumber or Kirby
  • 2 cups cubed (1/2") tomatoes
  • 1 cup cubed (1/2") yellow sweet onion
  • 2 tbsp red wine vinegar
  • 1 tbsp olive oil
  • 2 tbsp finely chopped basil or mint
  • 1 tbsp finely chopped parsley
  • Salt and pepper to taste
Toss all above ingredients in large bowl, chill and serve.
